a nourishing soup that's good for what ails you

Selena's Sick Soup

Serves 1

Sauté the following together over medium-low heat until the onions have softened (ab 6 mins). Sprinkle with sea salt midway through and stir occasionally. 

  • 1 generous tblsp olive oil 
  • 1 tblsp fresh chopped ginger 
  • 1-2 cloves finely chopped garlic 
  • 1 teaspoon red pepper flakes
  • 1/2 Small red onion, thinly sliced into half-moons
  • 1/2 orange bell pepper, thinly sliced into half-moons 
  • A few pinches of sea salt

Next, stir in the following and simmer over low heat for about 5 mins:

  • A generous amount of course ground black pepper (I do 5-10 turns)
  • 1 c low sodium chicken broth
  • 3/4 c water 
  • 1 tblsp apple cider vinegar
  • 1/4 c frozen peas or corn for texture (optional) 

Turn off heat and toss in your greens while the liquid is still piping hot. They will wilt to perfection by the time you’ve transferred it to a bowl. 

  • 1/2 bunch of rinsed, roughly chopped watercress 
  • 1/2 bunch of rinsed, roughly chopped cilantro 

Finish with a squeeze of fresh lemon or lime juice and additional salt if desired. This is meant to be eaten right away. 

Optional: garnish with a few drops of oil of oregano 🤧✌️
